Pete's Greens is an Active Farm in the Vermont Community
Fall 2008 Vegetable/Localvore Share, October 22nd - February 11th

The Vegetable/Localvore Share combines a weekly selection of seasonal organic
vegetables from Pete’s Greens with an assortment of “localvore” products from our favorite
nearby food growers and producers.

The Fall share is priced at $799 for 17* weeks worth of local, organic vegetables
and other locally grown and produced items.

In addition we will be growing soil grown sprouts indoors during the coldest part of the winter.
These include sunflower and radish sprouts and we intend to provide something fresh and
green nearly every week this winter. We will also have rinsed sprouts - with a mix of lentils,
peas and beans that are good for putting on salad or in soup. Especially toward the end of
this share period, the vegetable share will be heavy on root crops. They taste great, are
nutritious, and excellent winter fuel for the body and soul. But if you don't care for root crops,
this share is not for you!

Read these disclaimers to avoid disappointment! We will be providing greens from our
greenhouses throughout the fall and then various soil grown sprouts in January and Feb.
Keep in mind that our winter greens mixes are different from those we produce in the
summer! We have a poor celeriac crop and our sweet potato crop failed. We may be able to
procure them from other farms, but no guarantees.

Pete’s Greens Kitchen Specialties
We continue to experiment in our on farm kitchen, developing recipes to help Good Eats
members eat more locally year-round. Prepared items you may receive this share period
include "everything but the kitchen sink" vegetable soup base; sauerkraut and other lacto-
fermented vegetables; applesauce; frozen pizza dough; chicken broth made from Misty Knoll
bones and our veggies; and more.

Localvore Offerings
This period’s offerings may include eggs; many varieties of apples, pie, apple butter, apple
sauce, and cider from Champlain Orchards; several types of yogurt, cream, cornmeal, and
dried beans from Butterworks Farm; whole-wheat flour from Gleason Grains; organic maple
sugar; organic apple cider vinegar; Maine sea salt; Vermont Soy tofu; Rhapsody tempeh; an
array of  Vermont sheep, cow and goat cheeses; Bread from Elmore Mountain Bakery and
Red Hen Bakery; organic oyster and shitake mushrooms; sunflower oil, popcorn, rolled oats,
mixed cracked grains, barley, and miso from several Quebec farms; cranberries and
cranberry juice; and local organic raw honey. Most items are organic with the exception of the
apples, cider, and cranberries. (See
Champlain Orchards website for an explanation of their
growing practices.) Roughly once a month the share may include locally raised beef, pork,
sausage, bacon, lamb and/or chicken. Vegetarians will receive a non-meat alternative.

Localvore perishable items such as apples, yogurt and cheese will be provided more often,
while long storing staples such as flour and beans will be provided in greater quantity but less
frequently.

In the beginning the share will be heavier on our own produce, with more focus on Localvore
items during winter when we have less produce diversity.

*We will not be making a CSA delivery on Christmas Eve this year, even though it
falls on a Wednesday. Instead, we will spread part of the value of the Christmas
share over the first 6 weeks, when we have more produce, as well as provide an
extra bountiful share on December 17th (the week before).
Vegetable Offerings
This is an interesting and challenging period
of the year to provide a diverse array of
produce. For the first few weeks of the share
period we will still be harvesting much of the
produce from the field. Remnants of summer
such as greenhouse tomatoes and peppers
will appear, but by mid-November summer and
outdoor vegetables will be over. Our root
cellar will be overflowing with potatoes,
cabbage, carrots, and beets, and our onion
storage will offer 5 types of onions, shallots
and garlic.

We have several new greenhouses that will
allow us to provide greens and green crops
later into the fall than last year.
