Here's a good old fashioned slaw recipe for you. This recipe makes 2 pounds of cole slaw. What to put in your shredded slaw mix? That's up to you of course, but if I were making this one tonight, I'd shred a combo of the savoy cabbage and carrots, with a small handful of daikon thrown in for good measure. This is a standard recipe that begs for improvisation. Feel free to use less mayo, and less sugar. Substitute honey for the sugar (using a bit less, honey is sweeter by volume). Cider vinegar will be great, and balsamic delicious too. Take or leave horseradish depending on how you like it.

2 lbs of shredded slaw
1/2 cup sugar
1/2 cup mayonnaise
1/3 cup olive oil
1/4 cup cider vinegar
1 tsp yellow mustard
1 tsp celery seeds
1 TB prepared creamy horseradish

Pour your shredded slaw into a very large bowl and set aside.

In a separate, medium sized bowl, combine sugar, mayo, oil, vinegar, mustard, celery seed and horseradish with a wire whisk until the sugar is dissolved.

Toss mayo mixture with bagged slaw mixture until completely coated and refrigerate for four hours making sure to stir ever couple of hours or so. This recipe makes 2 pounds of cole slaw.

Kohlrabi Slaw

Kohlrabi Slaw


As the weather gets warmer, it's nice to use all these fantastic vegetables in their raw form. This is a very simple, healthy slaw.

2 lbs. kohlrabi, trimmed, sliced thinly
1 lb. cabbage, sliced thinly
1 onion, julienne cut
2 carrots, sliced and then cut into strips (or use of a mandolin)
4 radishes, sliced thinly
1/2 cup olive oil
Juice of 2 lemons
3 sprigs mint, rough chop
Salt and Pepper, to taste

Toss all ingredients in a bowl. Season with salt and pepper. Any other vegetables, apples or pears, can be added to this. Makes a wonderful side dish for any ribs or lamb.

Roasted Beet Salad

Roasted Beet Salad



1 bunch beets, trimmed
1/4 cup toasted walnuts or almonds
3 tbsp. olive oil
1 tbsp. minced shallot
1 tbsp. fresh lemon juice
1 1/2 tsp. cider vinegar
1/4 tsp. sugar
1/2 tsp. salt
1 large Asian pear
3 cups arugula

Preheat oven to 425°F.
Wrap beets in foil and roast in middle of oven until tender. Unwrap beets and cool. While beets are roasting, toast desired nut in a small pan until just slightly brown. Stir together shallot, lemon juice, oil, vinegar, sugar and salt in a large bowl. Slip skins from beets and halve large beets. Cut beets into 1/4-inch-thick slices and add to dressing, tossing to coat.
Quarter and core pear and cut into julienne strips. Add pear and arugula and gently toss. Top with nuts. A good blue or goat cheese goes well with this salad and gives it some depth.

1 tbsp. or olive oil
1 tbsp. fresh tarragon, rough chop
1/2 tbsp. fresh lemon juice
1/4 to 1/2 cup sliced almonds
1 small log goat cheese, cut into 4 rounds
1/2 bag arugula
1/2 pint cherries, pitted and stemmed

Preheat oven to 400°F.
Whisk together oil, lemon juice and tarragon. Season dressing with salt and pepper.

Spread almonds on a small baking sheet. Rub goat cheese rounds with olive oil and season with pepper. Gently place goat cheese on almonds, coating one side and then the other. Place in oven for 5 minutes, remove and let set up.

Arugula Salad with Lemon-Parmesan Dressing


Here's a solidly reviewed recipe for you. This salad makes a great side dish on its own, but is even better as a pizza topping! Brush the dough with olive oil, sprinkle it with sea salt and shredded mozzarella, then bake. When the pizza comes out of the oven, top it with the salad. The simple dressing could also be used to dress pasta with wilted arugula and whatever else you fancy in your dish.

1/3 cup freshly grated Parmesan cheese
5 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon peel
4 cups (packed) baby arugula
1 cup halved cherry tomatoes

Blend first 4 ingredients in processor. Season dressing with salt and pepper. Transfer to bowl. Cover; chill up to 3 days.

Combine arugula and tomatoes in large bowl. Toss with enough dressing to coat.

SUMMER VEGETABLE FRITTATA

SUMMER VEGETABLE FRITTATA


Works best with a well seasoned, cast iron skillet, but any oven proof skillet will do. Eat this with a fresh salad for a healthy mid-day meal. -elena
Serves 4 comfortably

8 farm fresh eggs
1/4 C milk or cream
Generous pinch of salt and freshly ground black pepper

1 tablespoon sunflower oil
1 medium Walla Walla onion, roughly chopped
1 lb zucchini, sliced into 1/2 inch rounds
1 medium bell pepper, sliced into strips
1 C of broccoli florets and stems, roughly chopped
1 cup arugula, leaves whole and any thick stems removed
1 cup Bonnieview's Ben Nevis, shredded or sliced thin
1 large tomato, sliced into rounds

Preheat broiler.

Whisk together eggs, milk or cream, salt, and pepper in a bowl.

Heat sunflower oil in a 12 inch cast iron or oven proof skillet over medium heat. Add onion and cook until just fragrant. Add zucchini and bell pepper, cooking just until tender, about 2 minutes. Add broccoli and arugula, cooking for 2 minutes more. Pour egg mixture into skillet and cook, lifting up cooked egg around edge using a spatula to let as much raw egg as possible flow underneath, until edge is set, about 2 minutes (top and center will still be very loose). Sprinkle evenly with cheese and then lay tomato slices on top in a decorative manner.

Broil frittata about 6 inches from heat until set, slightly puffed, and golden, 2 to 2 1/2 minutes.

Cool frittata 5 minutes, then loosen edge with a clean spatula and slide onto a large plate. Cut into wedges.

Creamy Braising Greens


I made this one up all by myself, so please excuse the not-so-precise measurements. I'm an absolute sucker for creamed spinach, so i serve this along side roasted chicken legs and whipped root vegetables in the fall.

2 T butter
1/4 cup of finely chopped alisa craig onions
2 cloves garlic, minced
2 T flour
3/4 cup (or more) of cream or half n half, room temp or even warmed up (helps prevent lumpiness)
a generous pinch of freshly grated nutmeg
a generous pinch of freshly ground black pepper
a generous pinch of salt
Bag of Pete's Braising Mix (of course!), blanched and roughly chopped

Over medium heat, melt the butter and saute the onions and garlic until just soft and fragrant.
Lower the heat! With a whisk, add the flour and cook/stir for 2 minutes. All the while whisking, add the cream, getting out all the lumps before they can cook hard, and continue to whisk and cook over low heat until the cream gets thick, about 2 to 3 minutes. Turn off the heat, stir in the seasonings to taste and then stir in the greens. Serves 2 or 3 grown ups.

Topping?

Topping


1 cup all purpose flour
1/3 cup sugar
1/4 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon baking soda
Pinch of salt
3 tablespoons chilled unsalted butter, diced
1/2 cup low-fat buttermilk (or 1/2 cup milk with 1 tsp lemon juice)

For Filling:
Preheat oven to 400°F. Mix sugar, flour and cloves in large bowl. Add strawberries and rhubarb and toss to coat with sugar mixture. Transfer filling to 10-inch-diameter glass pie dish.

For Topping:
Mix flour, sugar, cornmeal, baking powder, baking soda and salt in medium bowl. Add butter and rub in with fingertips until mixture resembles coarse meal. Gradually add buttermilk, tossing with fork until moist clumps form (do not overmix). Spoon topping evenly over filling.

Bake until topping is golden brown and filling is tender, about 25 minutes. Serve warm or at room temperature.

Topping
4 garlic cloves thinly sliced
1 medium onion, diced
4 small potatoes*
3 medium carrots*
1 medium turnip*
3 small to medium beets*
1 tsp crumbled dry thyme leaves or rosemary
1 tsp kosher salt
black pepper to taste
2 TB sunflower or olive oil, plus more for drizzling
8 oz chevre or blue cheese

For the crust, combine all of the dry ingredients in a food processor. Pulse to combine. In a large measuring cup, stir together 1 cup warm water, honey and oil. With the food processor running, slowly pour the liquids through the chute. If needed, add the rest of the water a bit at a time, until the dough all holds together nicely. It should be slightly sticky. Process for a total of 2 minutes. Form the dough into two tight balls, rub with oil and cover with plastic wrap or a dish towels. Leave in a warm place to rise 1 to 1 1/2 hours. Don't be worried if the dough doesn't double.

Preheat oven to 500F.

While the dough is rising, cut all of your root vegetables into a 1/2 dice. Combine the roots with the garlic, onion, herbs, oil, salt and pepper on a large baking sheet. Toss to coat. Roast in a 500 degree oven for 15-25 minutes, stirring occasionally, until the vegetables begin to soften and the edges begin to brown. Remove from the oven, cool slightly and toss with the cheese.

Maple Baked Beans

Maple Baked Beans


I use molasses here to achieve the color and flavor I remember from my mom's beans. She also uses salt pork, but I have replaced that with butter and salt. If you like, use salt pork or even bacon for a yummy alternative. -Heather

2 c dry beans
1/2 tsp baking soda
1 c grade B maple syrup
2 tbsp molasses
1 onion, chopped fine
1 1/2 tsp salt
2 tbsp butter

Soak beans overnight. Drain soaking liquid, cover with fresh water, add baking soda and bring to a boil. Simmer 30 minutes, until getting tender but not falling apart. Drain off and reserve the cooking liquid. In an ovenproof casserole or a crockpot, combine the maple, molasses, onion and beans. Add enough bean liquid to cover. Bake in a slow 300F oven for about 6 hours or in the crockpot on low all day. In the last hour mix in the butter and salt. When ready, the beans will be melting tender and deep golden brown.

Caramelized Onion Pizza

Caramelized Onion Pizza


Jessica Cole, one of our Summer Share members, emailed me the recipe for this amazing sounding pizza the other week. She said that the anchovies are optional. Though, they would add a terrific depth of flavor if you include them.

1/2 recipe pizza dough (see Recipe from Heather in July 2nd Newsletter)
3-4 onions, sliced
small bunch sage, chopped
5-6 anchovies, chopped (optional)
6 oz chevre

Preheat oven to 500F. Cook down the onions, sage and anchovies in a medium pot set over medium heat until they are soft, brown and very sweet. This should take about 30-40 minutes. Roll out the pizza dough and pre-bake the crust in the oven for 3-7 minutes, just until it is cooked but not browned. Spread the mixture over the crust and top with chunks of the goat cheese. Put it back in the oven for a few minutes to heat the cheese. Serve with a green salad and tomatoes on the side.
